CATERING MANAGER:
Your duties and responsibilities will be (but are not limited to):

Plan nutritious, cost‑effective rotating menus suited to physically demanding farm work, within a per-meal and monthly budget
-
Standardise recipes and portions to ensure consistency and cost control
-
Oversee daily production to meet time windows and headcount, ensure on‑time service and adequate portions for all employees
-
Personally handle or supervise critical steps (batch cooking, temperature control, plating/portioning)
-
Forecast needs; prepare purchase orders for food, disposables, cleaning agents, gas/solid fuel, and PPE
-
Source and negotiate with approved suppliers, compare price and quality
-
Conduct weekly and month‑end stock counts; reconcile variances and investigate losses
-
Monitor waste (plate, prep, spoilage) and implement corrective actions
-
Implement and enforce food safety procedures in kitchen, cold storage and canteens
-
Maintain cleaning schedules; verify completion and standards (equipment, surfaces, utensils, floors, waste areas)
-
Conduct internal audits (hygiene, temperature, housekeeping) and implement corrective actions
-
Apply Health and Safety practices in kitchen, cold storage and canteens
-
Manage your cook team and lead a respectful, efficient culture with our farm values in mind
-
Maintain all equipment in a safe condition and communicate any concerns
-
Inventory management and control
-
Supervise planting of crops, prep and freeze in season, utilise on farm crops as far as possible
-
Oversee whole kitchen and training centre environment (organised, clean and tidy)
-
On occasion cater and assist with specific farm social events, within and outside business hours
-
Planning and assistance in setting up the kitchen and prep area according to best practices
-
Follow strict Bio Security measures
Normal WORKING HOURS are from 06:00 – 16:00 with a 30 minute breakfast and 1 hour lunch break. You need to prep your team and ensure everything is ready for public holidays and weekends, in emergency situations you might need to work on some public holidays or weekends.
